  • 4 Spolumbo's Pork Sausages
  • 4 Italian rolls
  • 1 red pepper (sliced)
  • 1 yellow pepper (sliced)
  • 1 white onion (sliced)
  • 12 pickled peppers

For chimichurri

  • 1/2 cup finely chopped cilantro
  • 1/3 cup finely chopped parsley
  • 2 tbsp finely chopped oregano
  • 4 cloves minced garlic
  • 1 red Fresno chili, finely chopped
  • 1/3 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 tsp salt

How to make it

  1. Preheat grill to medium high heat.
  2. Combine chili, garlic, vinegar and 1 tsp salt in a medium bowl. Let sit 5 minutes. Stir in cilantro, parsley, and oregano. Using a fork, whisk in oil. Season with salt and reserve as sauce.
  3. In a sauté pan over medium high heat sauté bell peppers and onions until soft and slightly caramelized, about 5 minutes.
  4. Grill sausages for four minutes a side over medium high heat until nice grill marks come through.
  5. Grill Italian rolls 1 minute per side until you get nice grill marks.
  6. Serve sausages in the Italian bun with a scoop of caramelized peppers and onions. Drizzle with a spoonful of chimichurri sauce and top each sausage with three pickled peppers.
