Roasted Pork Sandwich with Braised Apples and Swiss Cheese

1-1.5 lbs Boneless Por Loin Centre
2 tbsp butter
2 green apples, sliced
1 cup sliced onion
1 sprig thyme
1/4 cup apple juice or cider
2 tbsp apple cider vinegar
4 pieces Founders & Farmers butter lettuce
4 sub buns
1/4 cup mayonnaise
1/2 tsp garlic powder
3/4 cup Cracker Barrel Shredded Swiss Cheese
salt and pepper
How to make it
Pre-heat oven to 425°F.
Season the pork with salt and pepper and then place on a rack over a pan.
While the oven is pre-heating, in a small bowl, combine the mayonnaise and the garlic and set aside for later.
Now put the pork in the oven and roast for about 25-30 minutes until reaches 140°F.
In a medium pan, melt the butter over medium heat. Now add the apples, onions and thyme. Season with a bit of salt. Let the apple cook down and colour a bit, then deglaze with the apple cider vinegar. When the vinegar is almost gone, add the apple juice and turn to low. Let cook on low and stir regularly so it doesn't scorch.
Remove pork from the oven and let rest for 10 minutes. Slice into thin slices, taste and adjust seasoning with salt and a but of apple cider vinegar (optional).
To assemble, spread a liberal amount of the garlic mayonnaise on the bottom of each bun, followed by the lettuce and now the sliced pork. Top the pork with braised apples and finish with the swiss cheese.
