  • 4 thick cut pork chops
  • 3 bunches green onions, roots removed.
  • 1/2 cup fresh parsley leaves
  • 1 tbsp + 1/2 cup Founders & Farmers olive oil
  • 3 tbsp pine nuts, toasted
  • 1/2 cup Founders & Farmers parmesan, grated
  • 1 lemon, zested
  • salt and pepper

How to make it

  1. Preheat grill on high.
  2. Season the pork chop with salt and pepper. Toss the green onions with 1 tbsp oil and season with salt and peper
  3. Turn down the grill to medium heat and place the pork and green onions onto the grill. Grill onion until quite charred, about 5 minutes. Cook pork until 145°F, making sure to flip halfway through cooking. About 10-12 minutes.
  4. Remove onions from the grill and let cool. When pork i finished cooking, remove from grill and let rest in a warm place.
  5. While pork is resting, in a blender, combine green onions, parsley, 1/2 cup oil, pine nuts, parmesan and lemon zest. Adjust seasoning with salt and peper.
  6. Serve the grill pork with the green onion pesto and enjoy a chilled glass of white wine.
