4 cups (about half a loaf) day old bread, torn into 1in pieces
12 Founders & Farmers eggs
1 cup (250g) cottage cheese
1/2 cup 2% milk
1/4 tsp each salt and pepper
1 cup shredded Founders & Farmers cheddar cheese
How to make it
In a large skillet over medium-high heat, brown sausage meat until cooked through, breaking up any large chunks with a wooden spoon or spatula. Drain excess fat and set aside.
In the same pan, over medium heat, sauté the onion & peppers, then add sausage along with the bread back into the pan. Stir to combine & transfer into greased 9x13in baking dish.
Next, whisk together eggs, milk, salt, pepper & cottage cheese & pour over sausage/bread mixture.
Sprinkle with shredded cheese & cover with plastic wrap to refrigerate overnight, You can skip this step & cook the same day, but chilling overnight helps the flavours mingle.
Preheat oven to 375°F.
Remove plastic wrap & cook on centre rack, uncovered, for around 45 minutes or until a toothpick inserted in the centre comes out clean. Let sit for a few minutes before serving.
