Filling

  • 1 lb lean ground chicken or turkey
  • 1 tbsp Founders & Farmers canola oil
  • 1 tbsp minced garlic
  • 2 tsp minced ginger
  • 1/2 cup Cal & Gary's Korean BBQ Sauce

Salsa

  • 1 cup cucumber, 1/4" diced
  • 1 tsp salt
  • 2 tbsp cilantro, chopped
  • 1/4 cup red onion, 1/4" diced
  • 1 tbsp toasted sesame seeds
  • 1 tbsp mirin
  • 1/2 tsp sesame oil
  • Juice of 1 lime
  • 1 tsp thai chili pepper, finely minced (optional)

Serving

  • Cal & Gary's white corn tortillas
  • Sliced avocado, sliced radish, shredded lettuce, cilantro, lime wedges (optional)

How to make it

  1. Toss diced cucumber with salt and let sit for 15 minutes, discard excess liquid. Combine salted cucumbers with remaining salsa ingredients and let marinate while you prepare the turkey/chicken.
  2. In a medium skillet set over medium -high hear with 1 tbsp oil, brown ground chicken or turkey, then set aside
  3. In the same pan, sauté garlic and ginger in oil over medium heat until fragrant and sizzling. Pour in Cal & Gary's Korean BBQ Sauce and stir in ground chicken. Reduce heat and cook until the meat is cooked through and well glazed.
  4. Warm up the tortillas in a skillet or grill and serve with accompanying sides.
