Ingredients

  • 1 can Cal & Gary's Organic Chickpeas, drained and rinsed
  • 1/2 lime
  • 1/4 cup yellow onion, diced
  • 2 cloves garlic, crushed
  • 1/2 tsp Founders & Farmers paprika
  • 2 tsp coconut oil
  • 1 tsp brown sugar
  • 1 tsp Founders & Farmers Turmeric Powder
  • 1/4 tsp Founders & Farmers Chili Powder
  • 1/4 tsp Founders & Farmers Ground Cumin
  • 1 can coconut milk
  • 2 cups Cal & Gary's Basmati Rice, optional
  • 4 Cal & Gary's Garlic Naan, optional
  • Fresh cilantro, for garnish

How to make it

  1. In a large pot with a lid, cook garlic and yellow onion on medium heat in coconut oil. Cook on medium heat until translucent and fragrant.
  2. Add turmeric powder, ground cumin, chili powder, paprika and brown sugar and chickpeas to the pan, cook until fragrant, stirring frequently
  3. Add coconut milk, cover and let simmer for 15-20 minutes, opening to stir ocassionally.
  4. Cook basmati rice according to package instructions.
  5. Remove from heat, squeeze lime on top.
  6. Garnish with fresh cilantro, serve with basmati rice or naan and enjoy!
