1/3 cup cooked Cal & Gary's thick cut bacon, crumbled (approx. 6 slices)
3/4 cup Founders & Farmers cheddar cheese
1/2 tsp Cal & Gary's organic garlic powder
1/4 tsp Cal & Gary's organic paprika
1/2 tsp salt
1/2 tsp Founders & Farmers ground black pepper
2 Founders & Farmers eggs, beaten
1/2 cup Cal & Gary's flour
1 1/2 cup breadcrumbs
Founders & Farmers Canola Oil for deep frying
Founders & Farmers Parmesan cheese and chives for garnish
How to make it
Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside.
In a large bowl, combine mashed potatoes, chives, bacon, paprika, garlic powder, cheddar cheese, salt and pepper. Mix well.
Roll mashed potato mixture into 1-inch balls. In three separate bowls, add flour, beaten eggs, and breadcrumbs. Coat the potato balls in flour, then egg, then breadcrumbs.
Deep fry potatoes in batches until light brown and crispy, approximately 2 minutes.
