  • 1 large zucchini, slicked thinly lengthwise on mandolin
  • 1/2 pound lean ground beef
  • 1 cup white onion, small diced
  • 1 tbsp roasted garlic
  • 2 tbsp Italian seasoning
  • 3 cups shredded cheddar cheese
  • 1/2 cup your favourite tomato sauce
  • 1 fresh tomato, diced
  • 1 Founders & Farmers egg
  • 1 cup cooked rice

How to make it

  1. Preheat BBQ & oven to 375°F
  2. On heated BBQ, grill mark zucchini strips, then remove from heat. Set aside for later,
  3. Over medium high heat, sauté onions in olive oil until translucent
  4. Add in ground beef. Brown and drain off excess grease.
  5. Add spices, roasted garlic, rice, tomato sauce and 2 cups of cheese (reserve 1 cup). Adjust seasonings, take off heat and cool down.
  6. Arrange zucchini strips - lay two overlapping each other and one at the end to resemble and upside down T shape. Spoon mixture on the bottom of zucchini, folding sides in and then roll over. All side and mixture should be tucked in, and cut parcel will be formed. Place into baking pan.
  7. Repeat until zucchini/mixture is complete.
  8. Sprinkle remaining 1 cup of shredded cheddar cheese onto parcels in baking dish.
  9. Bake in preheated oven for approximately 45 mins, or until hot.
  10. Serve and enjoy!
