2 1/2 cups of pancake mix
2 Cal & Gary's large eggs
2 cups of milk
1/2 cup cooked bacon, chopped
1/2 cup cooked breakfast sausage, chopped
6 Cal & Gary's large eggs
Pan spray
1/4 cup Cal & Gary's maple syrup
How to make it
Preheat oven to 400°F
In a large bowl, combine the pancake mix, 2 eggs, milk, bacon and sausage, Mix together until combined.
Spray a Texas size muffin pan with pane spray, and place about 1/4 cup of batter mix into the bottom of the tray.
With a large spoon, make a divot in the batter, and crack an egg into each of the muffins.
Carefully spoon batter on top of each egg, covering it completely.
Bake muffins at 400°F for 20 mins, or until the tops are full and bounce back to the touch.
When the muffins are done, remove them from the tray to a rack and brush liberally with maple syrup.
Let them cool and enjoy!
Leftover muffins can be stored in the fridge and reheated in the microwave for 45 seconds.
