  • 2 tbsp apple cider vinegar
  • 1 tbsp parsley or cilantro
  • 2 tsp honey
  • 3 limes, juice only
  • 1 small Granny Smith apple, finely diced
  • 1 jalapeno, finely diced (remove seeds for a milder version)
  • 1 shallot, finely minced
  • salt and freshly ground black pepper, to taste

How to make it

  1. Combine all ingredients in a mixing bowl and stir well. Season to taste with salt and black pepper.
  2. Spoon over freshly shucked oysters.
